Fermented Coconut Yoghurt

I always stress the importance of gut health, because it is absolutely crucial for overall health and wellbeing. This fermented coconut yoghurt is filled with beneficial probiotics which supports just that, a healthy digestion and a healthy gut. 

Ingredients

2 cans of full fat coconut milk (which type of coconut milk you use will affect the taste of your yoghurt, so choose a good one)

2 capsules with probiotics or liquid probioform 

A pinch of vanilla (optional)

A pinch of coconut sugar (optional)

Instructions

1. Pour the coconutmilk into a glass jar.

2. Open the probiotic capsule, and add in the powder together with vanilla and coconut sugar. 

3. Stir and cover with a clean towel and place the mixture to a place without direct sunlight (and preferably somewhere warm) 

4. Let ferment for 1-2 days, or until it's as thick and sour as desired. 

5. Store covered in the refrigerator.

6. Next time making a batch, simply use a tablespoon of the fermented yoghurt as a starter, instead of more probiotics. 

If you have separation, that’s ok! Either stir it in, or put it in the refrigerator separated, then scoop off the creamy top layer. Also keep in mind that it doesn't always thicken before it's refrigerated, meaning that the consistency can be quite liquid before putting it in the fridge.
